I have to admit that it was hard to choose only 3 recipes for this post. Tomatoes don’t need much transformation to impress. A drizzle of a good olive oil, sea salt and fresh herbs (basil, oregano, thyme) and they are dressed to impress.
Tomatoes bring back very fond memories of my trip to Italy 6 years ago. Almost every morning, we would have toasted baguette with olive oil and oregano. Tomatoes were cut in half and pressed on bread to soak it. That’s when the magic happened. I tried to replicate the experience through the Tomato Crouton Salad. And it’s absolutely delizioso.
It is not recommended to refrigerate tomatoes as they loose their natural sweetness.
Try to make the best of your tomatoes. They have so much to offer.
